A fifth test, ServSafe Allergens, was previously limited to a few states, but is now legally required for certain roles in states including Massachusetts, Rhode Island, Illinois, Virginia, Michigan, and parts of Maryland (Montgomery County), with many other jurisdictions following suit. The newest focus area, ServSafe Workplace, is an online-only course without a testing component that deals with workplace harassment and bias.

The ServSafe program is administered by the National Restaurant Association, which provides industry-standard training and testing materials that are accepted nationwide in the United States. The exams are available in a variety of languages, besides English, and are offered in both traditional paper and modern computer-based formats. While introductory coursework can often be done online, the Manager-level exam requires a certified proctor to ensure the integrity of the results. Candidates now have the flexibility to test at designated physical centers or utilize authorized remote services like ProctorU to complete their certification from a secure home environment.

Since food safety regulations and certification types can vary significantly by county, it is essential to check with your local health department before committing to a program or test date. What are the costs?

The cost of ServSafe courses and exam fees vary by course and method of instruction, such as online, classroom, or remote-proctored versions. For the latest information, you can access the most current prices and procedural guidelines on the official ServSafe website.

There may be different fees for locally offered courses and exams facilitated by independent instructors. Retests will require additional fees, as a new exam voucher must be purchased for each attempt, though they will likely be less than the original expense of a full course-and-exam bundle.

What should I bring?

Items needed, or allowed, at a ServSafe exam vary by the type and format of the exam, but a valid, non-expired government-issued photo ID (such as a driver’s license, passport, or military ID) or a current student ID is strictly required. For the paper version of any ServSafe exam, you also need a few sharpened #2 pencils and an eraser.

If you are taking an exam in English, but English is not your primary language, you may be allowed to bring a printed bilingual dictionary (e.g., English-Spanish) to the exam site. However, the dictionary must only provide word-to-word translations; it cannot contain definitions, hand-written notes, or any instructional images, and it must be inspected by your proctor before the exam begins. If you are testing online via ProctorU, you must also ensure your computer has the Guardian Browser installed and that you have a working webcam and microphone. You will need a private, well-lit room with a clear workspace; testing on a couch or in a public space is not permitted.

Generally, no other items are permitted in the exam room or workspace, including purses, bags, calculators, smartwatches, headphones, or any type of electronic equipment, including cell phones. Additionally, no food or drink is allowed during the examination period.

These roles extend far beyond traditional full-service restaurants, reaching into mobile food units, schools, and highly regulated healthcare environments like hospitals and nursing homes. As the industry has matured, so have the safety standards; most jurisdictions now legally mandate that the person in charge be a Certified Food Protection Manager. This shift has transformed food service from a simple job into a highly regulated profession where every staff member acts as a frontline defender of public health through mandatory Food Handler certification.

Am I eligible?

The ServSafe courses and exams have no formal educational prerequisites, although specific training hours or course completion may be required by law in some jurisdictions. For example, certain states require proof of training before a proctor is permitted to administer the Manager exam.

To access the official ServSafe online Manager exam, you must possess a valid Exam Access Code; in many integrated training packages, all online course modules must be completed before the final exam is unlocked. Because an online or in-person training program may be required by a state or locality before a local exam, it is vital to check your local and state requirements for ServSafe exams before you sign up to take the test.

Why does it matter?

Passing a ServSafe exam is often a legal requirement for your ability to be hired in a food or alcohol service capacity. Under the current FDA Food Code, most operations must have at least one Certified Food Protection Manager present during all hours of operation, making this credential essential for career advancement.

Additional certification in managing food or alcohol service enables you to acquire leadership positions and ensures the establishment remains compliant with strict 2026 state liability and “dram shop” laws. Certification in several areas, including the newly mandated Allergen awareness training, significantly expands your employment possibilities in the foodservice field.

It is important to note that while the ServSafe Manager certification is valid for five years, the ServSafe Food Handler, Alcohol, and Allergens certificates typically expire after three years, depending on your local and state regulations.

What salary can I expect?

Bureau of Labor Statistics data from 2024 shows that the average hourly wage for a foodservice employee is $14.92/hour, but that this can reach over $20.00/hour for certain positions. Some food service positions also include a significant income from customer tips, which is only limited by the employee’s dedication to good service. The job outlook for growth in this industry through 2034 is expected to be “faster than average” with the expected growth level at around 5%.

When is it available?

Both ServSafe coursework and exams are available in person and online, though availability and requirements may vary depending on where you live. Note that online exams for the ServSafe Food Handler and ServSafe Alcohol Primary exams do not require a proctor. All other exams, including the Manager, Alcohol Advanced, and specific state-mandated Allergen exams, whether print or online, do require a proctor and would need to be taken at a test center or online using ProctorU. If you don’t pass on your first attempt, you may retest a second time with no waiting period (though you must purchase a new exam access code). If you do not pass your second attempt, you must wait at least 60 days from your last attempt before you can try a third time. During a 12-month period, you may take the same ServSafe test up to four times total.

What are some Tips & Tricks

  • After you register for a local ServSafe course, you will probably receive study materials from your testing agency or an instructor. Ensure you are using the 9th Edition (2026) materials, which are updated to align with the Supplement to the 2022 FDA Food Code. Read these materials and take notes while doing so before you attend your training sessions. This will help you get the most out of the instruction.

  • You may answer the questions on a ServSafe exam in any order and you may go back to previous questions to answer them or change your answer. Furthermore, you will be given a chance to check over your answers on the entire test before you either turn in your test booklet or submit your exam online. If testing online via ProctorU, you will use the Guardian Browser, which allows you to flag questions for review before your final submission.

  • Answer every single question on the exams, as there is no penalty for guessing.

  • If you are taking a paper version of a ServSafe exam, be sure to fill in the answer bubbles completely. Do not simply mark them with an “X” or a “/” mark. Also, be very careful to fill in the bubble that corresponds to your answer choice, especially if the bubbles are to the side of the lettered choices on the answer sheet.

  • Even if your state or locality does not require course completion before taking this exam, it is highly recommended that you take time to study thoroughly for these tests. They have recently been updated to include the “Big Nine” allergens (now including sesame) and cover much more material than older versions of the tests. The 9th Edition puts a heavy emphasis on Active Managerial Control, food defense (using the FIRST initiative), and updated cooling and reheating parameters. Using study materials such as ServSafe practice tests can help give you an idea of the difficulty level of questions you’ll encounter and can help you feel much more prepared for test day.

How much time is allowed?

The online course requires eight to 10 hours for the Manager test, four hours for the Alcohol Safety test, 90 minutes to two hours for the Food Handler test, and 90 minutes for the Allergen test. It is recommended that any course be completed in one-hour sessions and that the total length for the longer courses not exceed three weeks. It is important to leave at least two days between the completion of the course and the exam day to allow study time. Times allotted for the exams are:

  • Manager: two hours (timed)

  • Alcohol: two hours (untimed)

  • Food Handler: about 90 minutes (untimed)
