Ice may be scooped for service in a customer’s drink, to keep cold foods cold during holding, or to cool items down. Ice should always be scooped with a clean and sanitized scoop stored outside the ice machine. Scooping with hands leads to cross-contamination and scooping with a glass could lead to a physical hazard.
